Effects of Pretreatment and Drying on the Volatile Compounds of Sliced Solar-Dried Ginger (Zingiber officinale Roscoe) Rhizome

Ginger (Zingiber officinale Roscoe) rhizomes are mostly used as spice and medicine due to their high aroma intensity medicinal bioactive compounds. However, the volatile compounds of ginger, partly responsible for its properties, can be affected by pretreatment, drying method, extraction processes employed. The objective this study was assess effects pretreatment on yellow ginger variety at nine months maturation. effect potassium metabisulfite (KMBS) blanching using head space solid-phase microextraction with GCMS/MS identification (HS-SPME/GCMS/MS) investigated. KMBS concentrations 0.0 (control), 0.1, 0.15, 0.2, 1.0% 50°C 100°C were dried in a tent-like concrete solar (CSD) dryer open-sun (OSD). different KMBS-treated fresh did not result any particular pattern compound composition identification. top five sesquiterpenes. 0.15% CSD emerged best retaining α-zingiberene, β-cubebene, α-farnesene, geranial. presence β-cedrene, β-carene, dihydro-α-curcumene makes unique. adopted an affordable alternative preserve ginger.
